
Pineapple Chocolate Bars
Ingredients
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp fine salt
- ¾ cup butter
- 1 ½ cups Peotraco Caster Sugar
- 3 pcs whole eggs
- 1 tsp vanilla
- 1 can 8 oz crushed pineapple drained
- 1 tsp grated lemon rind
- ¼ cup + 1 tbsp Peotraco Premium Cocoa Powder
- 1 cup cashew nuts or walnuts
Instructions
- Preheat oven to 325°F. Grease 9 x 13 inch baking pan.
- Sift together all-purpose flour, baking powder and salt. Set aside.
- Cream the butter with Peotraco Caster Sugar using an electric mixer at medium speed.
- Add eggs one at a time. Add vanilla.
- Lightly mix the butter mixture into dry ingredients until just combined. Do not over mix.
- Divide the batter mixture into two parts.
For Chocolate batter
- Blend Peotraco Premium Cocoa Powder into first half of the batter. Add the nuts.
- Pour it to a greased baking pan. Set aside.
For Pineapple batter
- Add the crushed pineapple and lemon rind on the second half of the batter.
- Pour on top of the chocolate batter, spread gently.
- Bake for 40 to 45 minutes. Test for doneness by inserting a toothpick in the center and it must come out clean.
- Cool in pan and cut into bars.
