Pineapple Chocolate Bars

Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp fine salt
  • ¾ cup butter
  • 1 ½ cups Peotraco Caster Sugar
  • 3 pcs whole eggs
  • 1 tsp vanilla
  • 1 can 8 oz crushed pineapple drained
  • 1 tsp grated lemon rind
  • ¼ cup + 1 tbsp Peotraco Premium Cocoa Powder
  • 1 cup cashew nuts or walnuts

Instructions
 

  • Preheat oven to 325°F. Grease 9 x 13 inch baking pan.
  • Sift together all-purpose flour, baking powder and salt. Set aside.
  • Cream the butter with Peotraco Caster Sugar using an electric mixer at medium speed.
  • Add eggs one at a time. Add vanilla.
  • Lightly mix the butter mixture into dry ingredients until just combined. Do not over mix.
  • Divide the batter mixture into two parts.

For Chocolate batter

  • Blend Peotraco Premium Cocoa Powder into first half of the batter. Add the nuts.
  • Pour it to a greased baking pan. Set aside.

For Pineapple batter

  • Add the crushed pineapple and lemon rind on the second half of the batter.
  • Pour on top of the chocolate batter, spread gently.
  • Bake for 40 to 45 minutes. Test for doneness by inserting a toothpick in the center and it must come out clean.
  • Cool in pan and cut into bars.
